Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 parsnip, peeled and chopped
  • 1 turnip, peeled and chopped
  • 1 sweet potato, peeled and chopped
  • 1/2 head of cabbage, chopped
  • 1 can of diced tomatoes
  • 4 cups of vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and sauté for 2-3 minutes, until the onion is translucent.
  3. Add the carrots, celery, parsnip, turnip, and sweet potato to the pot and sauté for 5-7 minutes, until the vegetables start to soften.
  4. Add the chopped cabbage, canned tomatoes, vegetable broth, bay leaves, and dried thyme to the pot.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, until the vegetables are tender.
  6. Remove the bay leaves and season with salt and pepper to taste.
  7. Serve hot with crusty bread or crackers.
