Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 1 parsnip, peeled and chopped
- 1 turnip, peeled and chopped
- 1 sweet potato, peeled and chopped
- 1/2 head of cabbage, chopped
- 1 can of diced tomatoes
- 4 cups of vegetable broth
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes, until the onion is translucent.
- Add the carrots, celery, parsnip, turnip, and sweet potato to the pot and sauté for 5-7 minutes, until the vegetables start to soften.
- Add the chopped cabbage, canned tomatoes, vegetable broth, bay leaves, and dried thyme to the pot.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, until the vegetables are tender.
- Remove the bay leaves and season with salt and pepper to taste.
- Serve hot with crusty bread or crackers.
