Here is a simple recipe for making apricot jam:
Ingredients:
- 2 pounds of apricots
- 2 cups of granulated sugar
- 2 tablespoons of lemon juice
Instructions:
- Wash and pit the apricots. Chop them into small pieces and place them in a large pot or saucepan.
- Add the sugar and lemon juice to the pot and stir to combine.
- Heat the mixture over medium-high heat, stirring occasionally, until the sugar dissolves and the mixture starts to boil.
- Reduce the heat to medium-low and let the mixture simmer, stirring occasionally, for about 30-40 minutes or until the mixture thickens and reaches the desired consistency.
- To check if the jam is ready, place a small amount on a cold plate and let it cool. If it sets and wrinkles when you push it with your finger, then it's ready.
- Remove the pot from the heat and let the jam cool for 10-15 minutes.
- Transfer the jam to clean, sterilized jars and seal them tightly.
- Let the jars cool to room temperature before storing them in the refrigerator for up to 3 months.
