Here is a simple recipe for making apricot jam:

Ingredients:

  • 2 pounds of apricots
  • 2 cups of granulated sugar
  • 2 tablespoons of lemon juice

Instructions:

  1. Wash and pit the apricots. Chop them into small pieces and place them in a large pot or saucepan.
  2. Add the sugar and lemon juice to the pot and stir to combine.
  3. Heat the mixture over medium-high heat, stirring occasionally, until the sugar dissolves and the mixture starts to boil.
  4. Reduce the heat to medium-low and let the mixture simmer, stirring occasionally, for about 30-40 minutes or until the mixture thickens and reaches the desired consistency.
  5. To check if the jam is ready, place a small amount on a cold plate and let it cool. If it sets and wrinkles when you push it with your finger, then it's ready.
  6. Remove the pot from the heat and let the jam cool for 10-15 minutes.
  7. Transfer the jam to clean, sterilized jars and seal them tightly.
  8. Let the jars cool to room temperature before storing them in the refrigerator for up to 3 months.
